PORK, VEGGIES & RICE
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1/4 cup hoisin
2 tbs plus 1 tsp rice vinegar
1/2 jalapeno pepper, seeded
4 green onions, sliced
3/4 pound pork tenderloin
1 1/2 pounds brown rice
4 oz snow peas, halved
1 tbs plus 1 tsp olive oil
1 tbs grated peeled ginger
2 tsp toasted sesame seeds
3 carrots, shredded
Heat broiler. Combine hoisin, 1 tbs vinegar, jalapeno, half the green onions, and pepper in a blender, pulse until smooth. Transfer to a bowl. Slice pork in half lengthwise, place both pieces on a baking sheet. Sprinkle with salt, brush with half the hoisin mixture. Broil until golden and cooked through, set aside. *Combine rice, peas, 1 tbs each oil and vinegar, 1 tsp seeds, ginger, and salt in a bowl. Microwave until rice is hot and peas are tender. Toss carrots, remaining green onions and 1 tsp each oil, vinegar, and seeds in a bowl. Slice pork. SERVE with rice mixture, carrot salad and remaining sauce & ENJOY...
