MEXICAN EGGS & BEANS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
In a baking dish, combine 1 1/2 cups salsa, 14.5 oz can diced tomatoes, drained, and 15 oz can black beans, cover with foil. Bake at 400 degrees for 15 min. Make 4 wells in bean mixture. Slide 1 egg into each well, 4 eggs total. Bake to desired doneness. SERVE with cheese quesadillas & ENJOY...
