APRICOT COUSCOUS & CHICKEN
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
In a bowl, combine 1 cup couscous, 1/4 cup dried apricots, chopped, and 1 tsp grated ginger. Add 1 1/4 cups boiling water, stir to combine. Let stand 5 min. Fluff. Heat 1 tbs oil in a skillet. Season 4 boneless skinless chicken breasts with 1/2 tsp each cumin, salt and pepper, cook until golden and cooked through. SERVE & ENJOY...
