PICKLED STRAWBERRY SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
Toss 2 cups halved strawberries and 1 sliced shallot with 3 tbs sherry vinegar, 2 tsp sugar, and a pinch of salt, let sit 10 min. Remove berries and shallot. Whisk 2 tbs oil, 1 tsp Dijon mustard, salt and pepper into vinegar mixture. Toss with 6 cups mesclun greens and berry mixture. Top with hazelnuts and goat cheese. SERVE & ENJOY...
