FRIED SHRIMP SANDWICH
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 pound shrimp, peeled, deveined
3 eggs
1 1/2 cups each milk, flour, and breadcrumbs
1 tsp each paprika and Worcestershire
3/4 cup mayonnaise
1/4 cup chopped dill pickle
2 tbs ketchup
1/2 tbs horseradish, drained, rinsed
4 green onions, chopped
1 tbs minced parsley
Oil
4 rolls, split open
Shredded lettuce
Lemon wedges
Butterfly shrimp. Whisk eggs, milk, paprika, and salt in a bowl, add shrimp, refrigerate 15 min. Put flour in a bowl, season. Put breadcrumbs in another bowl. Remove shrimp from egg mixture, dredge in flour. Dip shrimp in egg mixture, roll in breadcrumbs, transfer to a rack set over a baking sheet, refrigerate. *Combine mayo, pickle, ketchup, horseradish, Worcestershire, green onions, and parsley in a bowl. Refrigerate. Heat 1/2" oil in a skillet. Add shrimp, fry until golden. Remove shrimp, drain on paper towels, season. Spread mayo mixture on rolls, fill with lettuce and shrimp. SERVE with lemon wedges & ENJOY...
