SLOWCOOKER TURKEY ROAST
MAKES 4 SERVINGS.
1/2 cup flour
1 tbs chopped thyme, plus a few sprigs
2 tsp paprika
2 cloves garlic, chopped
4 pound bone in turkey breast
3/4 cup white wine or broth
2 tbs each tomato paste, Worcestershire, and chopped parsley
2 bay leaves
4 carrots, cut into pieces
4 stalks celery, cut into pieces
1 onion, sliced
2 potatoes, sliced
Combine 1/4 cup flour, chopped thyme, paprika, garlic, salt and pepper in a bowl. Rub all over turkey, transfer to a slowcooker. Combine remaining flour, wine, tomato paste, Worcestershire, 1 tbs parsley, and bay leaves in a bowl. *Scatter carrots, celery, onion, potatoes, and thyme sprigs around turkey in slowcooker. Pour in wine mixture, cook on low 7 hours. Transfer turkey to a cutting board. Skim off fat from gravy in slowcooker, discard bay leaves. *Stir in remaining parsley, season. Slice turkey.
