CHIPOTLE CHEESE SAUCE
Combine 2 tbs each butter and flour, salt and pepper in a pan, whisk over heat until foamy. Whisk in 1 cup milk, cook until thick. Add 3/4 cup grated Colby cheese, 1/4 cup chopped canned green chiles, drained, 1 diced tomato, and 1 tbs hot sauce, stir until creamy. SERVE on hot dogs & ENJOY...
