ICEBOX CAKE WITH COCONUT & FRUIT
MAKES 8 SERVINGS.
1 1/2 cups heavy cream
1/2 cup cream of coconut
30 gingersnap cookies
1/2 cup unsweetened coconut flakes
1 large mango
Juice of 1/2 large lime
1 tbs sugar
Salt
Beat cream in a bowl until stiff peaks form. Fold in cream of coconut until incorporated. Spread 1 tsp whipped cream onto each gingersnap. Press cookies together on their sides to form a 12" long log on a platter. Cover log with remaining whipped cream. Cover with plastic, refrigerate 6 hours. *Heat oven to 350 degrees. Spread coconut flakes on a baking sheet, bake until golden, cool. *Peel, pit, dice mango. Toss with lime juice, sugar, and a pinch of salt in a bowl. Sprinkle toasted coconut all over cake.
