PORK SKILLET WITH-VEGGIES
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
2/3 cup Peppadew peppers, sliced, plus 3 tbs brine
1/2 cup chopped parsley
8 pork chops
12 oz potatoes, sliced
2 tbs oil
1 onion, sliced
12 oz sliced mushrooms
1 pint cherry tomatoes
3 cloves garlic, sliced
1/2 cup chicken broth
Combine 1/3 Peppadews, half the parsley, salt and pepper in a bowl, rub all over pork. Set aside. Combine potatoes and 1/4 cup water in a bowl, microwave until tender. *Heat a skillet, add oil. Add pork chops, cook until browned. Flip, cook until browned on other side, transfer to a plate. Add onion, mushrooms, tomatoes, and garlic to skillet, cook until vegetables start browning. Add broth and remaining Peppadews and brine. *Bring to a simmer, cook until sauce is slightly reduced. Return pork to pan, cook until cooked through. Stir in potatoes. Top with remaining parsley.
