[SimplifyMe] Stuffed {Zucchini} with Crab-Salad

 

STUFFED ZUCCHINI WITH CRAB-SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

2 zucchini, halved lengthwise
1/2 pound lump crabmeat, picked through
3 tbs lemon juice
3 tbs olive oil
1/4 cup light mayonnaise
1 tbs Creole style mustard
1/2 tsp Worcestershire
1/8 tsp cayenne pepper
Paprika
Chopped green onions

Fill a pot with 1" water, fit with a steamer basket, bring to a boil. Scoop out seeds from zucchini, leaving a 1/4" thick shell. Season zucchini, arrange in steamer basket, steam until tender.  *Combine crabmeat, 1 tbs lemon juice, 2 tbs oil and salt in a bowl. In another bowl, combine mayo, mustard, 1 tbs lemon juice, Worcestershire, cayenne and salt.  *Brush zucchini with remaining oil and lemon juice. Fill with crab mixture, top with spicy mayo. Sprinkle with paprika and green onions. SERVE & ENJOY...
