STUFFED ZUCCHINI ITALIAN STYLE
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
2 zucchini, halved lengthwise
3/4 cup ricotta cheese
1/2 cup shredded Italian cheese blend
2 tbs chopped parsley
2 oz sliced salami, chopped
1 tsp grated lemon zest
1 tbs lemon juice
1/4 cup marinara sauce
Heat oven to 400 degrees. Line a baking dish with foil. Scoop out seeds from zucchini, leaving a 1/4" thick shell. Combine ricotta, 1/4 cup Italian cheese, parsley, salami, zest and juice in a bowl. *Season zucchini, fill with ricotta mixture. Drizzle each zucchini half with 1 tbs marinara sauce, sprinkle with remaining Italian cheese. Transfer to baking dish, bake until cheese is melted 20 min. SERVE & ENJOY...
