ROAST CHICKEN WITH THYME-GRAVY
MAKES 8 SERVINGS.
1 chicken
1/2 lemon, sliced
4 garlic cloves, sliced
6 sprigs herbs, any kind
2 tbs unsalted butter
GRAVY---
2 tbs flour
2 cups chicken broth
1/2 cup white wine
1 tsp thyme leaves
Heat oven to 450 degrees. Place a rack in a roasting pan. Place chicken in roasting pan. Place lemon, garlic, and herbs under chicken skin. Rub butter over outside of chicken, season inside cavity and out. Tie legs with twine. *Roast 30 min. reduce oven to 400 degrees, roast 45 min. or until done. Remove to a cutting board, allow to rest. GRAVY---Skim off fat from roasting pan. Pour out drippings, reserving 1/4 cup. Place roasting pan with drippings over heat, whisk in flour. Cook 1 min. Whisk in broth and wine, stir in thyme. Simmer until slightly thickened. Carve chicken. SERVE WITH GRAVY & ENJOY...
