SHRIMP RADISH-AVOCADO SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1/4 cup light mayonnaise
2 stalks celery, sliced, plus 3 tbs chopped celery leaves
3 tbs chopped cilantro
Salt and Pepper
1 1/2 limes
1 1/2 pounds shrimp, peeled, deveined
1 tbs canola oil
2 avocados, diced
5 oz pkg kale salad mix
1 bunch radishes, sliced
Heat grill. MAKE DRESSING---Combine mayo, celery leaves, 2 tbs cilantro, 1 tbs water, salt and pepper in a bowl. Grate in zest of 1 lime, squeeze in juice. Toss shrimp with oil, salt and pepper in a bowl. *Arrange shrimp on grill, cook until pink. Transfer to bowl with dressing, squeeze in juice of remaining 1/2 lime. Add celery, avocados, salad mix and radishes to bowl with shrimp, toss. Top with remaining cilantro. SERVE & ENJOY...
