[SimplifyMe] Corn with Balsamic {Chicken}

 

CORN WITH BALSAMIC CHICKEN
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

2 tbs olive oil
2 tbs balsamic vinegar
1 tbs ketchup
1 tbs Dijon mustard
4 boneless skinless chicken breasts
Salt and Pepper
2 slices bacon, cut into pieces
4 ears corn, kernels cut off
1 bunch Swiss chard, chopped
2 tbs unsalted butter
3 green onions, sliced

Heat a grill. Brush grill grates with oil. Whisk vinegar, oil, ketchup and mustard in a bowl. Season chicken, brush all over with vinegar mixture. Grill until marked and cooked through, transfer to a plate. *Heat a skillet on grill grates. Add bacon, cook until crisp. Add corn kernels to skillet. Cook until corn is lightly browned. Add butter, green onions, and chard, cook until chard is wilted. Season. Slice chicken. SERVE WITH CORN MIXTURE & ENJOY...
