EASY BEAN-CHICKEN SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 lemon, zested, juiced
1 tbs Dijon mustard
1 tsp anchovy paste
2 cloves garlic, minced
1 tbs minced thyme
Worcestershire
1/2 cup olive oil
1 cup cooked white beans
1 cup diced tomatoes
1 cup cubed provolone cheese
1/4 cup diced green peppers
1/4 cup minced onions
8 cups sliced lettuce
1 pound cooked sliced chicken breast
IN a bowl, combine 3 tbs lemon juice, 2 tsp lemon zest, next 4 ingredients and a dash of Worcestershire. Whisk in oil. Season. Add next 5 ingredients to bowl, toss. Arrange 2 cups lettuce on each of 4 plates. Arrange chicken over lettuce. Top with bean mixture and any remaining dressing. SERVE & ENJOY...
