GRILLED PEPPER-HERB POLENTA
MAKES 6 SERVINGS.
1/4 cup sliced onions
1/4 cup seasoned rice vinegar
1/2 cup sliced roasted peppers
1 tbs chopped basil
1/4 tsp minced garlic
3 tbs olive oil
1 pound pkg prepared polenta
HEAT grill. In bowl, toss onions with vinegar, let sit to marinate. In separate bowl, combine peppers, basil, garlic and 1 tbs oil, set aside. Slice polenta into rounds, brush with remaining oil. *Grill until lightly browned. Drain onions, discard vinegar. Cut polenta slices in half, arrange on platter. Top with pepper mixture and onions. SERVE WARM, ROOM TEMP OR CHILLED & ENJOY...
