SEARED LAMB WITH VEGGIES
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 pound potatoes
6 oz green beans, cut in thirds
1 tbs whole grain mustard
2 tbs oil
8 lamb chops
Salt and Pepper
1 lemon
2 cloves garlic, chopped
1/2 cup breadcrumbs
1 cup parsley, chopped
Heat oven to 400 degrees. Place potatoes in a pot, cover with water. Bring to a boil, cook until tender, adding beans during last 3 min. of cooking. Drain, reserving 1/4 cup cooking liquid. Cut potatoes in quarters. *Return vegetables to pot, toss with mustard and 1 tbs cooking liquid. Heat 1 tbs oil in a skillet. Season lamb with salt and pepper, cook until golden. Transfer skillet to oven, roast to desired doneness. *Remove 4 strips of lemon zest, chop. In a bowl, combine zest, garlic, breadcrumbs, and remaining oil. Scatter on a baking sheet, toast until golden 4 min. Squeeze 2 tbs lemon juice over breadcrumbs, sprinkle with parsley, salt and pepper, toss. Spoon over lamb.
