VEGGIE PASTA WITH BACON
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
12 oz spaghetti
1 cup peas
4 slices bacon, cut into pieces
1 egg yolk
3 tbs half and half
Salt and Pepper
1/2 cup grated Parmesan cheese
1 tbs tarragon, chopped
1 tbs oil
4 green onions, sliced
Cook pasta according to package directions, adding peas during last 30 seconds of cooking. Drain pasta and peas, return them to pot. Cook bacon in skillet until crisp. In a bowl, whisk together yolk, half and half, salt and pepper. *Stir in Parmesan and tarragon. Heat oil in a skillet. Add green onions, cook until beginning to soften, remove from heat. Add pasta, peas and bacon to skillet. Add yolk mixture, toss. SERVE & ENJOY...
