[SimplifyMe] Salmon {Cakes} with a Salad

 

SALMON CAKES WITH A SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

1 lemon
1 cup parsley
1/2 cup dill
4 green onions, sliced
1 1/2 pounds skinless salmon fillet, cut into pieces
1 egg white
Salt and Pepper
1 cup breadcrumbs
3 tbs oil
2 tsp honey
1 bunch radishes, sliced
1 head lettuce, torn

Heat oven to 250 degrees. Grate 2 tsp lemon zest into a processor. Add 1/2 cup parsley, 2 tbs dill and half the green onions, pulse to combine. Add salmon, egg white, salt, pepper, pulse until coarsely chopped. *Form salmon mixture into 8 patties. Coat each patty with breadcrumbs. Heat 1 tbs oil in a skillet. Add salmon, cook until golden and cooked through. Transfer to a baking sheet, place in oven to keep warm. *Squeeze juice of lemon into a bowl. Whisk in honey, salt, pepper, remaining oil. Add radishes, lettuce, remaining parsley, dill and green onions, toss. SERVE with salmon cakes & ENJOY...
