LEMON LIME CHEESE-CAKES---Mini cheesecakes and so yummy.
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
5 whole graham crackers, crushed
1 lime, zested
8 oz pkg cream cheese
6 tbs lemon curd
1 tbs milk
Divide graham crackers among 4 glasses. Cut 4 slices from lime, set aside. Juice remaining lime. In processor, puree cream cheese, lemon curd, 1/2 tsp lime juice, 1/4 tsp lime zest, and milk until smooth. Divide cream cheese mixture among glasses. Top with lime slices. Chill until ready to SERVE & ENJOY...
