VEGGIE FISH ASIAN-SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1/3 cup teriyaki sauce
2 tbs toasted sesame oil
1 tbs Dijon mustard
4 tsp honey
2 cloves garlic, minced
1 pound salmon steak, skin removed
1 avocado, sliced
2 cups sliced cucumber
1/2 cup sliced green onions
4 cups torn lettuce
In bowl, mix together first 5 ingredients. Heat grill. Brush both sides of salmon with 2 tbs teriyaki mixture. Grill until done. Flake fish. In bowl, toss avocado and next 3 ingredients. Divide among 4 plates. Top with salmon. Drizzle with remaining teriyaki mixture. SERVE & ENJOY...
