CUCUMBER SOUP WITH LEMON
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 cucumber, chopped
1 cup lowfat buttermilk
1 cup crushed ice
3 tbs lemon juice
1 tsp lemon zest
1/2 clove garlic
1/4 cup olive oil
2 tsp chopped chives
In blender, puree cucumber, buttermilk, ice, juice, zest, and garlic with oil, season. Transfer to bowls, top with chives. SERVE & ENJOY...
