SQUASH EGG FRITTATA
MAKES 4 SERVINGS.
4 cups cubed butternut squash
7 eggs
5 tbs oil
4 oz link fully cooked chorizo sausage, diced
1 bell pepper, chopped
2 cloves garlic, chopped
2 bunches green onions, chopped
5 oz pkg baby arugula
Juice of 1/2 lemon
Heat oven to 400 degrees. Put squash in a bowl with 1/4 cup water, season, microwave until tender 8 min. Drain. Whisk eggs and 1/4 cup water in another bowl until frothy. *Heat 2 tbs oil in a skillet. Add chorizo, cook until it starts browning. Add squash, bell pepper, and garlic. Cook until pepper is tender and squash starts browning. Stir in green onions, cook 1 min. Transfer to bowl with eggs, stir. *Coat the bottom of a skillet with 2 tbs oil, heat. Add egg mixture, cook until edges are golden. Transfer skillet to oven, bake until set in center 15 min. *Toss arugula with remaining oil and juice, season. Loosen edge of frittata, unmold onto a plate, cut into wedges. SERVE with salad & ENJOY...
