SHRIMP PASTA MINI-BAKES
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
8 oz rotini spiral pasta
1 pound medium shrimp, shelled, deveined
2 tbs butter
2 shallots, chopped
2 cups ricotta cheese
1/2 cup heavy cream
10 oz box frozen chopped spinach, squeezed dry
3/4 cup grated Parmesan cheese
1 tsp lemon zest
1/2 cup chopped parsley
Bring a pot of salted water to a boil. Add pasta, cook until al dente. Place shrimp in a colander. Pour pasta into colander over shrimp. Return pasta and shrimp to pot, let stand 5 min. Heat oven to 450 degrees. Melt butter in a skillet. Add shallots, cook 3 min. Add shallots to pasta and shrimp along with ricotta, cream, spinach, 1/2 cup Parmesan, zest, season. Spoon pasta mixture into four 12 oz baking dishes, sprinkle with 2 tbs Parmesan. Bake 10 min. Let casseroles cool 15 min. Sprinkle with remaining Parmesan and parsley. SERVE & ENJOY...
