[SimplifyMe] Rum Ice-Cream {French-Toast}

 

RUM ICE-CREAM FRENCH-TOAST
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

1 bread baguette
2 eggs
1/2 cup half and half
3 tbs sugar
1/4 cup dark rum
2 tbs unsalted butter
1/4 cup maple syrup
1 pint ice cream

Heat oven to 250 degrees. Cut baguette on diagonal into 8 slices. Whisk eggs, half and half, sugar, and 3 tbs rum in a baking dish. Add bread, soak 10 min. Melt 1 tbs butter in a skillet. Add half the bread, cook until golden and cooked through. Transfer to a baking sheet, keep warm in oven. Add remaining butter to skillet, repeat with remaining bread. Mix maple syrup and remaining rum in a bowl, microwave until warm 1 min. SERVE French toast with maple rum syrup and ice cream & ENJOY...
