CHERRY UPSIDE-DOWN CAKE
MAKES 6 SERVINGS.
1 3/4 cups sugar or Splenda
1 1/2 pounds cherries, pitted
2 tsp lemon juice
1 3/4 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 stick unsalted butter
2 eggs
1 tsp vanilla
1 cup lowfat buttermilk
2/3 cup dark chocolate chips
Heat oven to 375 degrees. Combine 3/4 cup sugar and 1 1/2 tbs water in a skillet, stir until mixture looks like wet sand. Cook until light amber. Remove from heat. Toss cherries with juice, arrange over caramel, set skillet aside. *Whisk flour, baking powder, baking soda, and salt in a bowl. Beat butter and remaining sugar in a bowl until fluffy. Add eggs, beat well. Beat in vanilla. Add flour mixture alternating with buttermilk, mix until incorporated. Stir in chips. Pour batter over cherries. *Transfer skillet to oven, bake until cake is golden and done 50 min. Let sit 15 min. then invert onto a platter. SERVE & ENJOY...
