[SimplifyMe] Caramel Fruit {Pie}

 

CARAMEL FRUIT PIE
MAKES 8 SERVINGS.

1 cup sugar
1/4 cup apple juice
6 tbs butter
2 tsp vanilla
1/4 tsp salt
8 apples, peeled, cored, quartered
1 sheet puff pastry

Heat oven to 425 degrees. In skillet, cook sugar and apple juice until sugar melts and is deep amber in color. Remove from heat. Add butter, stir until melted, stir in vanilla and salt. *Arrange apple quarters in pan, in 3 concentric circles. Simmer until almost tender. *Transfer skillet to lined baking sheet. Top with pastry, tucking in overhangs. Bake 25 min. or until golden. Transfer to wire rack, cool 15 min. Invert platter over skillet, flip together. Remove pan. SERVE warm & ENJOY...
