BANANA-SYRUP FRENCH-TOAST
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
3 tbs unsalted butter
2 bananas, sliced
2/3 cup maple syrup
3 eggs
1 cup milk
3 tbs sugar
3 cups cornflakes, crushed
4 slices Texas toast, halved on the diagonal
Heat oven to 375 degrees. Combine 1 tbs butter, bananas, and maple syrup in a pan, bring to a simmer, keep warm. Whisk eggs, milk, and sugar in a dish. Put cornflakes in another dish. Soak bread in egg mixture 45 seconds, then dredge bread in cornflakes. Set aside on a plate. *Melt 1 tbs butter in a skillet. Add half the bread, cook until golden. Transfer to a baking sheet. Add remaining butter to skillet, repeat with remaining bread. Transfer to oven, bake until cooked through 10 min. Top with banana syrup. SERVE & ENJOY...
