VEGGIE SALSA MUSTARD-CHICKEN
MAKES 8 SERVINGS.
2 cups corn
1 cup chunky tomato salsa
1/4 cup sliced green onions
1/4 cup chopped cilantro
1 tbs orange juice
1/4 cup garlic herb dry rub
3 tbs honey mustard
3 tbs balsamic vinegar
2 tbs minced thyme
1 tbs oil
8 boneless skinless chicken breasts
Heat grill. In bowl, combine first 5 ingredients. Season. In separate bowl, mix next 5 ingredients, reserve half. Brush chicken with remaining mustard mixture. Grill chicken until done. Brush chicken with reserved mixture. Arrange corn salsa and chicken on platter. SERVE & ENJOY...
