SPICY ROAST WITH VEGGIES
MAKES 6 SERVINGS.
Salt and Pepper
1 1/2 tsp coriander
1/2 tsp red pepper flakes
1 tbs thyme
1 bay leaf, crumbled
3 cloves garlic
7 pound pork shoulder roast, skin removed
Juice of 2 oranges
Juice of 2 lemons
1 cup chicken broth
1 pound potatoes
1 rutabaga, peeled, cut into pieces
14.5 oz can diced tomatoes
1 1/2 tsp sugar
Combine salt, pepper, coriander, pepper flakes, thyme, bay leaf, and garlic in a processor, pulse to make a paste. Pierce pork all over, rub with spice paste. Tie roast with twine. *Transfer meat to a slowcooker. Add juice of 1 orange and 1 lemon along with broth, potatoes, and rutabage, cook on high 7 1/2 hours. Transfer meat to a cutting board, cover, set aside. Skim off fat from cooking liquid. *Add tomatoes, sugar, and juice of remaining orange and lemon to slowcooker, cook on high 30 min. Remove twine from pork, slice. SERVE with vegetables and cooking liquid & ENJOY...
