SLOWCOOKER CHICKEN WITH RICE
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 bunch green onions, chopped
3" piece ginger, peeled, chopped
1/2 jalapeno pepper, seeds removed
2 tbs brown sugar
2 tbs soy sauce
1 tbs rice vinegar
1 tomato, halved
6 skinless boneless chicken thighs, quartered
4 oz mushrooms, stemmed, quartered
2 bunches watercress, tough stems removed
Cooked rice
Put all but 2 tbs green onions in a blender, add ginger, jalapeno, brown sugar, soy sauce, vinegar, tomato, and salt, blend until smooth. Transfer to a slowcooker. Add chicken and mushrooms to slowcooker, stir, cook on low 4 hours. Chop watercress, stir into slowcooker. SERVE chicken and vegetables with rice, top with reserved green onions & ENJOY...
