SLOWCOOKER MOROCCAN CHICKEN
MAKES 4 SERVINGS.
8 oz butternut squash, peeled, cut into chunks
1 turnip, peeled, cut into chunks
1 leek, chopped
1/2 cup raisins
4 each skin on bone in chicken drumsticks and thighs
3 cups chicken broth
2 tbs tomato paste
1 tsp cumin
1/2 tsp turmeric
Grated zest and juice of 1 lemon
Couscous
Combine squash, turnip, leek, and raisins in a slowcooker. Season chicken, place on top of vegetables. Whisk broth, tomato paste, cumin, turmeric, zest, juice, and salt in a bowl. Pour mixture over chicken and vegetables. Cook on high 4 hours. SERVE chicken and vegetables with couscous, drizzle with some cooking liquid & ENJOY...
