SALMON CAKES WITH RELISH
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
4 dill pickles with juice, diced
1 apple, diced
4 oz pouch lemon dill salmon steak
1/3 cup garlic herb bread crumbs
1/3 cup Dijon mayonnaise blend
In bowl, combine pickles, apple, and 2 tbs pickle juice, set aside. In bowl, flake salmon until crumbly. Stir in breadcrumbs and mayo. Shape mixture into 4 patties. In skillet coated with cooking spray, cook salmon cakes until done. SERVE salmon cakes with relish & ENJOY...
