POACHED EGGS IN TOMATO-SAUCE
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
2 tbs oil
1 onion, sliced
3 bell peppers, seeded, sliced
3 cloves garlic, minced
15 oz can diced tomatoes with juice
1 tbs tomato paste
1/2 tsp cumin
1/2 tsp paprika
1 tsp sugar
8 eggs
Warm oil in a skillet. Add onion, season, cook until onion is translucent. Add peppers, cook until tender. Add garlic, saute 30 seconds. Add tomatoes with juice, stir, bring to a boil, simmer until thickened. *Add tomato paste, spices, sugar, and 1 cup water, stir, season. Make 8 indentations in sauce, break an egg into each. Season. Cover skillet, cook until whites are opaque and yolks are cooked as you like them. SERVE & ENJOY...
