GARLICKY LEMON FISH---Easy and delicious.
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
4 fish fillets
1/4 cup flour
6 tbs oil
3 cloves garlic, sliced
1 1/4 cups chicken broth
Grated zest and juice of 1 lemon, plus wedges
1 tbs unsalted butter
1/4 cup chopped parsley
5 oz pkg spinach
Season fish. Spread flour on a plate, dredge fish in flour. Heat 2 tbs oil in a skillet. Add fish, cook until golden. Transfer to a plate, tent with foil. *Heat 3 tbs oil in a skillet. Add garlic, cook until it starts browning. Add broth, zest and juice, bring to a boil, cook until liquid is reduced by half, season. Add butter, whisk until slightly thickened, stir in parsley. *Toss spinach with remaining oil and pepper. Divide among plates, top with fish, drizzle with pan sauce.
