EASY VEGGIE GALETTE
MAKES 4 SERVINGS.
2 potatoes, sliced
1/2 onion, sliced
8 oz asparagus, cut into pieces
1 tbs oil
Salt and Pepper
4 oz grated cheese
1 pie crust
1 tbs Dijon mustard
1 egg
Heat oven to 425 degrees. In a bowl, toss together first 6 ingredients. Add cheese, toss. Roll pie crust into a 12" circle. Slide crust onto a baking sheet. Spread mustard on crust. *Spoon potato mixture onto crust. Fold edge of crust over a little. In a bowl, whisk together egg and 1 tbs water. Brush crust with egg mixture, bake until crust is golden and vegetables are tender 35 min. Cut into pieces. SERVE & ENJOY...
