CHEESY SAUSAGE PASTA
MAKES 6 SERVINGS.
1 pound pasta
1 pound Italian sausage, casings removed
1 clove garlic, minced
Two 14.5 oz cans diced tomatoes with juice
1 tsp basil
1 tsp oregano
5 oz spinach
1 cup shredded mozzarella
1/2 cup grated Parmesan
Bring a pot of salted water to a boil. Cook pasta until al dente. Drain. In a skillet, cook sausage until no longer pink. Add garlic, cook 30 seconds. Stir in tomatoes with juice, basil and oregano. Bring mixture to a boil, simmer until slightly thickened. Add pasta to skillet, stir to combine. Add spinach, cook until wilted. Season. Remove skillet from heat, sprinkle cheeses over pasta. Toss. SERVE passing additional Parmesan on the side & ENJOY...
