CHEESY MUSHROOM SCRAMBLED EGGS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
8 eggs
Salt and Pepper
1 tbs unsalted butter
In a bowl, whisk together eggs, 1 tbs water, salt and pepper. Heat 1 tbs oil in a skillet. Add 1 onion, chopped, salt and pepper, cook until tender. Add 8 oz mushrooms, quartered, cook until golden brown and tender. Cook eggs. Melt butter in a skillet. Add egg mixture, cook to desired doneness. Add 4 cups spinach, thick stems discarded, leaves chopped, to eggs, cook until beginning to wilt. Fold in mushroom mixture and 4 oz Swiss cheese, grated. SERVE & ENJOY...
