STRAWBERRY SUNDAE CAKE
MAKES 8 SERVINGS.
2 cups crushed puffed rice cereal
1 cup dark chocolate chips, melted
48 oz pkg no sugar added strawberry ice cream
Red food coloring
1/2 cup lowfat cream cheese
3 tbs lowfat milk
1/2 tsp vanilla
1 pint strawberries, sliced
LINE bottom of 8" springform pan with foil, coat with cooking spray. In bowl, mix cereal and chocolate. Press into bottom of pan. Chill 10 min. Beat ice cream until smooth, tinting with food coloring. *Pour over crust, freeze until firm. In processor, process next 3 ingredients until smooth. Unmold cake. Top with cream cheese mixture and berries. SERVE & ENJOY...
