SLOWCOOKER TACOS
MAKES 6 SERVINGS.
1 tbs oil
3 pound boneless beef roast
1/2 tsp cumin
Salt and Pepper
16 oz jar green salsa
1/2 onion, sliced
2 cloves garlic, smashed
12 corn tortillas, warmed
Shredded lettuce, chopped tomatoes, avocado, radishes
Lime wedges
Heat oil in a skillet. Season beef with cumin, salt and pepper. Add to skillet, cook until golden. Transfer meat to a slowcooker, add salsa, onion and garlic, cook on high 6 hours. *Remove meat to a cutting board, shred. Return meat to slowcooker. Serve meat in tortillas, top as desired. SERVE WITH LIME WEDGES & ENJOY...
