SLOWCOOKER SUBS WITH MEATBALLS
MAKES 6 SERVINGS.
Two 28 oz cans whole tomatoes, crushed
6 oz can tomato paste
2 bay leaves
1 1/2 cups grated Parmesan cheese
1/2 cup chopped parsley
4 cloves garlic, chopped
Salt and Pepper
3/4 cup breadcrumbs
1/2 cup milk
1 1/2 pounds ground beef
2 eggs
1 1/2 pounds Italian sausage, cut into pieces
2 loaves Italian bread, cut into 3" pieces, split open
Shredded mozzarella cheese
Combine tomatoes, tomato paste, bay leaves, in a slowcooker. Add 1 cup water, 1/4 cup parsley, 2 garlic cloves, salt and pepper. *Combine breadcrumbs and milk in a bowl, soak 2 min. In a separate bowl, combine beef, eggs, 1 cup Parmesan, remaining parsley, 2 garlic cloves, salt and pepper. Add breadcrumb mixture, mix until combined. Shape into 24 meatballs. Transfer to slowcooker. *Add sausage to slowcooker, cook on low 7 hours. Remove bay leaves, stir in remaining Parmesan. Season with salt and pepper. SERVE ON BREAD, TOP WITH MOZZARELLA & ENJOY...
