SLOWCOOKER PORK-CHOPS WITH VEGGIES
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
2 tbs flour
1 tbs cumin
Salt and Pepper
4 pork chops
14.5 oz can diced tomatoes
1 pound potatoes, peeled, sliced into rounds
1 onion, sliced
1 red bell pepper, sliced
4 cloves garlic, sliced
2 bay leaves
1 tbs red wine vinegar
Combine flour, cumin, salt and pepper in a bowl. Season pork chops with some of the seasoned flour, transfer to a slowcooker. Add tomatoes, potatoes, onion, bell pepper, garlic, and bay leaves to bowl with remaining seasoned flour, toss. Pour vegetables over pork chops, cook on high 4 hours. *Transfer pork chops to a platter. Skim fat from cooking liquid, discard bay leaves. Stir vinegar into slowcooker, season. SERVE pork chops with vegetables and cooking liquid & ENJOY...
