LOW-CALORIE HAM PIZZAS
MAKES 4 SERVINGS.
2 pieces flatbread, halved
1 tbs olive oil
1/2 cup grated part skim mozzarella cheese
4 oz sliced ham, torn
4 cups arugula
1 bulb fennel, sliced
2 tbs chopped parsley
1/2 onion, sliced
2 tbs balsamic vinegar
Salt and Pepper
1/2 cup cubed cheddar cheese
HEAT a grill. Brush flatbread with oil, grill until marked on bottom. Flip bread, top with mozzarella. Continue grilling until cheese melts. Transfer to a platter, top with ham. *Combine arugula, fennel, parsley and onion in a bowl. Drizzle with vinegar and 1 tbs oil, season, toss. Pile on top of pizzas, sprinkle with cheddar.
