CHORIZO & EGGS ON TORTILLAS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
12 oz Mexican chorizo
8 corn tortillas
8 eggs
15 oz can refried beans, warmed
15 oz jar tomato salsa
Heat oven to 400 degrees. Arrange tortillas on 2 baking sheets, spray top of each tortilla with cooking spray, transfer baking sheets to oven. Bake 12 min. until crisp but not brown. Heat skillet. Stir in chorizo, cook until cooked through. Remove chorizo to let fat drip off. Place chorizo in bowl, set aside. *Drain fat from skillet, add 2 tsp oil. Crack 3 eggs into skillet, cook until desired doneness. Remove fried eggs to parchment lined baking sheet, repeat. To assemble, smear beans on tortillas, followed by salsa. Sprinkle chorizo on top of salsa, finish with 1 egg. SERVE IMMEDIATELY & ENJOY...
