CHICKEN SALAD IN LETTUCE-LEAVES
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
2 skinless boneless chicken breasts
1/4 cup olive oil
1/2 tsp smoked paprika
Salt and Pepper
1 clove garlic
3 jarred piquillo peppers, 2 whole, 1 sliced
1/3 cup light mayonnaise
Juice of 1/2 lemon
3 tbs chopped chives
16 small lettuce leaves
2 stalks celery, sliced
3 tbs salted almonds, chopped
Heat a grill. Toss chicken with 1 tbs oil, paprika, salt and pepper in a bowl. Grill chicken until cooked through, cool slightly, slice. MAKE DRESSING---Combine garlic and remaining oil in a bowl, microwave until garlic is softened. Transfer garlic and oil to a blender, add whole peppers, puree until smooth. Transfer to a bowl, whisk in mayo, juice and 2 tbs chives, season. *Divide chicken among lettuce leaves, drizzle with dressing. Top with celery, almonds, sliced pepper and chives. SERVE & ENJOY...
