BOWL OF VEGGIES
MAKES 8 SERVINGS.
1 onion, minced
1 cup sliced snow peas
1/4 cup grated carrots
1 cup sliced asparagus
2 tbs oil
1/4 cup green onions
1 head cauliflower, grated
4 tbs chicken broth
1 tbs seasoned rice wine vinegar
2 tbs chopped parsley
In skillet, cook onions, peas, carrots and asparagus in oil until tender. Add green onions, cauliflower and broth. Cook until heated through. Stir in vinegar and parsley. Season. Transfer to a bowl. SERVE either warm or chilled & ENJOY...
