STEAK VEGETABLE SALAD
MAKES 4 SERVINGS OR HALF RECIPE FOR 2 SERVINGS.
8 oz green beans
1 onion, sliced
4 carrots, sliced
2 potatoes, sliced
2 tbs oil
1 1/2 tbs whole grain mustard
Salt and Pepper
1 pound sirloin steak
1 tsp Italian seasoning
1/4 cup red wine vinegar
1 head lettuce, sliced
3 heads endive, sliced
HEAT oven to 400 degrees. Place green beans and onion on 1 baking sheet and carrots and potatoes on another, toss each with 1/2 tbs oil and 1/2 tbs mustard. Season with salt and pepper. Roast until tender and crisp, 12 min. for beans and onions and 20 min. for carrots and potatoes. Sprinkle steak with Italian seasoning, salt and pepper. Heat remaining oil in a skillet. ADD steak, cook to desired doneness. Transfer to a cutting board, let rest 5 min. To skillet, add vinegar, remaining mustard and salt. Cook 1 min. Toss lettuce and endive with roasted vegetables and all but 1 tbs vinegar mixture in a bowl. Slice steak, SERVE over salad. Drizzle with reserved vinegar mixture & ENJOY...
