ORZO SEARED FISH
MAKES 4 SERVINGS OR HALF RECIPE FOR 2 SERVINGS.
5 tsp oil
3/4 cup orzo
1 1/2 cups chicken stock
1/2 tsp salt
1/4 cup roasted red bell peppers, sliced
2 tbs chopped dill
2 tbs lemon juice
1 oz chopped pitted olives
4 fish fillets
1/2 tsp pepper
HEAT a pan. Add 2 tsp oil. Add orzo, saute until toasted. Add stock and 1/4 tsp salt, bring to a boil. Cover, simmer 15 min. Stir in bell peppers, dill, juice and olives, keep warm. HEAT a skillet. Add remaining oil to pan. Sprinkle fish with remaining salt and pepper. Cook until desired doneness. SERVE with orzo mixture and lemon wedges & ENJOY...
