BACON LEEK PASTA
MAKES 4 SERVINGS OR HALF RECIPE FOR 2 SERVINGS.
Salt and Pepper
12 oz any short pasta
4 slices bacon, cut into pieces
1 bunch leeks, sliced
3/4 cup heavy cream
1/3 cup grated Parmesan cheese
Chopped parsley
BRING a pot of salted water to a boil. Add pasta, cook as label directs. Reserve 1 cup cooking water, drain pasta. Cook bacon in a skillet until crisp, drain on paper towels. Pour off all but 1 tbs drippings from skillet. ADD leeks to drippings in skillet. Season with salt and pepper, cook until soft. Add cream, cook until it begins to thicken. Add pasta to skillet along with Parmesan, half of bacon and pepper, toss, adding pasta cooking water to loosen. TO SERVE---top with remaining bacon, more Parmesan and parsley & ENJOY...
