ROAST WITH VEGGIES
MAKES 6 SERVINGS.
3 pound beef roast
1/2 tsp onion powder
1 tsp garlic salt
1/2 tsp pepper
1 tbs minced thyme
2 tbs oil
1 cup pitted green olives
12 oz jar marinated artichoke quarters, drained
2 cups cherry tomatoes
2 red bell peppers, sliced
HEAT oven to 350 degrees. Place beef on rack set in roasting pan. Rub with onion powder, garlic salt, pepper, thyme and oil. Roast 1 hour or until done, adding olives, artichokes, tomatoes and bell peppers during last 15 min. SERVE roast with veggies & ENJOY...
